Oreo cheesecake bites with sunflower tops

Today is a recipe post.  Last year for my birthday my sweet husband signed me up pastry classes, it was so fun and I learned so much and I developed a useful secret talent, unlike my prized secret talent of break dancing haha but that’s a post all in its self.  It has been fun to be able to use this talent for different small events.  I recently got called to be a young womens leader for the church I attend .  It has been a blast to get to know the girls and learn so much about the program since I myself was not an active member during that time in my life.  The girls participate in a program called Personal Progress It’s like a girl’s version of the Eagle Scout where the young women can develop skills and talents and come closer to their Father in Heaven.  Anyways, they have a special night called Evening of Excellence where they get to present everything they worked on that year.  I am so impressed with the hard work and motivation these girls showed to accomplish their projects.  I had the opportunity to provide the dessert.  Since the theme was Sun flowers: representing that we should walk tall because we are daughters of a Heavenly King I decided to make Oreo cheesecake bites with Sunflower tops! RECIPE NOTES:

OREO CHEESECAKE BITES

You can easily double this recipe to make 30 cupcakes (I tripled it and it was perfect)

Yield: 15 Cupcakes

Prep Time: 10 Minutes

Cook Time: 22 Minutes

Total Time: 6 Hours

INGREDIENTS:

36 Oreo cookies, 30 whole, 6 coarsely chopped

1 pound (2 8-ounce packages) cream cheese, at room temperature

1/2 cup granulated sugar

1/2 teaspoon vanilla extract

2 large eggs, at room temperature

1/2 cup sour cream

1/8 teaspoon fine salt

Vanilla Frosting

15 Cupcake liners

DIRECTIONS:

Preheat the oven to 275 F. Line 2 standard muffin tins with 15 paper liners. Place 1 whole Oreo cookie in the bottom of each lined cup.

In a large bowl, use an electric mixer to beat the cream cheese until smooth.  Add the sugar and beat until combined. Beat in the vanilla then add the eggs, one at a time, beating until combined.

Beat in the sour cream and salt. Do not over mix. Stir in the chopped Oreo cookies.

Divide the batter among the cookie-lined cups, filling each almost to the top. Bake until the filling is set, about 22 minutes.

Transfer to wire racks to cool completely inside the muffin tins. Refrigerate at least 4 hours, or overnight, before serving.

These can be stored in an airtight container in the fridge for up to 3 days or in the freezer for up to 1 month. Defrost in the fridge overnight before serving.

DECORATING SUNFLOWER TOPS

INGREDIENTS:

Vanilla frosting (I just use the cheap 99 cent kind from Walmart, I like the consistency of it)

yellow food dye ( I use Wilton’s gel kind)

the other 15 Oreo cookies

Pipe bag

Wilton tip #21 and #67 (or get creative and use any petal/leaf tip you like)

DIRECTIONS:

Use the other 15 Oreo cookies and place one on top of each cupcake after it has been refrigerated for at least 4 hours.

Begin doing three layers of petals, I did a wide variety of different petals using the tips from Wilton #21 and #67
